Hi all, as I am so anti-hunting it took me a long time to try eating pheasant, but have been convinced that if someone in the countryside shoots something to eat, and not for fun, then it is more sustainable than farmed meat. Our local 'friend' regularly brings us a fresh trout in season, and also the occasional pheasant. However, he has offered us a rabbit. I am keen to give it a try, but don't know any recipes for cooking it. Do you know of a good one?

Hi Jazz,the only one I have ever used is 'Rabbit Stew/Casserole' so you can either do it in the oven or on top.Just put the jointed Rabbit into the pan,add onion, celery,carrots ,any herbs you might like to flavour it with,add some stock (chicken would be OK) season,and cook on a low light on top ,or a low oven.It is also good with a dumpling or two in!
It is not out of a recipe book,just learned from watching a great friend of ours who loves to cook it.

Thanks, katelb, that makes me feel more confident. I'll give your recipe a try as soon as I get the rabbit, and let you know how it goes.

I did have a recipe for Rabbit, but I cannot find it, I will have to come back to you if I can on this one. I do not cook rabbit very often, I like rabbit but Ken is not that keen on it so I only seem to cook it once a year.
