A couple of weeks ago on Woman's Hour a chap talked about an 1885 recipe for ice cream so I made it and it's lovely.
I punnet of strawberries
I tub of whipping cream
Billington's unrefined sugar with a vanilla pod.
Whip up the cream into peaks
mash the strawberries
pour sugar into strawberries and wait until dissolved
Fold strawberries into whipped cream
Put in container and then into freezer
Take out of freezer after one hour and fork through mixture
Put back into freezer for one hour
After second hour take out of freezer and fork through mixture again, this breaks up ice crystals.
Third time take out of freezer and fork through mixture
Put back into freezer until needed
When ready to use, leave out of freezer for about 25 minutes to soften.
Dish up with ice cream scoop.

PS I used a couple of tablespoonfuls of ordinary white granulated sugar.
