View Full Version : Simple Leek and Potato Soup

Makes enough for about 2 large servings

3 or 4 leeks
2 or 3 medium floury potatoes
2 onions
Salt and Pepper to season
Olive Oil
Chilli or Cayenne Pepper Powder


Chop the leeks and onions, and cube the potatoes. Add olive oil to a pan and sweat everything for 10 or 15 mins. Then add around two pints of veg stock and bring to the boil. Simmer on a very low heat for 50 mins to an hour, adding salt and pepper to season, and a dash of chilli powder or cayenne pepper. Take off heat, blend down and eat immediately, or leave overnight and eat the next day.

The best potato and leek soup I had was at a garden centre just outside Lanark - can't remember the name unfortunately. I add a bit of cream to the soup after blending. And lots of pepper. Yum. xx

That's sounds interesting Gentian. I again put lots of pepper in - I like the strong peppery taste. I will try the nutmeg next time. xx

Sounds lovely Oola. would anybody be interested in compiling a RM all time favourites thread? We could each post our favourite (and of course credit-crunch busting) recipes for 2009?
