Hi all, I have just had a visit from a mobile fish van from Newcastle. I bought some sea bass and red mullet, which looks very good. I am keen to recreate a recipe that I had in a restaurant with the sea bass, but what about the red mullet? Does anyone know of nice ways to cook it? Much appreciated.

I made red mullet not that long ago for the first time and got the recipe from nigel slaters kitchen diaries book, i was not disappointed.
Baked red mullet with saffron and mint
red mullet- 4
olive oil- 4 tablespoons
white wine - 3 tablespoons
mint leaves - a handful
a good pinch of saffron stamens
small waxy potatoes such as La Ratte to serve
Boil a pan of water. Set the oven at 220 c/gas 7.
Rinse the fish and pat dry, then lay in a oven proof dish. Pour the olive oil into a small bowl, add the white wineand salt and black pepper. Roughly shred the mint leaves and stir into wine and oil along with the saffron. Pour the marinade over fish and leave for one hour (though you dont have to if there is no time).
Put potatoes into boiling water and place fish in oven basting half way through cooking. it will take 12 - 14 minutes to cook but check after 10 as it depends on how big the mullet is.
Serve on to warm plate and pour juices over.

Mmmmm..... that was a lovely recipe for cooking red mullet, Fife. Andy and I really enjoyed it and it has gone into our home recipe book for regualr use. Thanks again.
