6oz Self Raising Flour
4oz Soft Margarine
6oz Caster Sugar
2 med Free Range Eggs
1 tsp Baking Powder
1 Lemon
5 tbsp Milk
For the Syrup
3oz Icing Sugar
Juice of the Lemon
Preheat the Oven to 350F/180C/Gas Mark 4
Place all the ingredients into a bowl with the grated rind of the Lemon,and beat until smooth.
Pour mixture into a greased and lined loaf tin, and bake for 50 - 55 mins.
Remove from Oven and allow to cool slightly.
Syrup... Mix icing sugar and juice of the Lemon in a small pan and heat,do not boil.
Prick over the top of the slightly cool cake with a skewer or similar object.
Pour the syrup mixture over the cake.
Leave to cool thoroughly before removing from the tin.
