When I got home today there was a partridge hanging on my back door that a friend of OH had left. Does anyone know how to cook it and what to have with it. I have never had one before.

I think they have to hang for 8 days. Was it freshly killed? I think you would do it the same way as a chicken, chop off the neck, take out the giblets, pluck out the feathers. Easy!
It will taste very strong, gamey. Serve it like a turkey, stuffing and cranberry sauce.

Thank you for the recipes Crocus. I have copied and saved them and will study them later.

Franbee I don't know how long they have been dead so will have to phone the friend to find out but luckily they are plucked and gutted. When I looked in the bag there were two of them, I was surprised how small they are, I thought they would be larger.

I cooked the partridges today. I left them whole and put them in a casserole dish with veg, stock and seasoning and they were very tasty. Next time I am going to roast them. I don't know if I like seeing a whole bird on my plate. When it is slices you don't think it was a live thing.
