Does anybody have a recipe for either lemon barley or elderflower cordial that they would be willing to share? It would be greatly appreciated! - Baab95

3Oz Pearl Barley, 3 pints of water, 3 lemons,3 oz sugar. Bring Barley and water to the boil, cover and simmer for 30 mins. Strain. Peel lemons very thinly making sure there is no pith. Remove Pith from lemons and slice. Place lemons and lemon peel in a jug with the barley water. Stir in the sugar, to dissolve, and allow to go cold. Strain again, and store in fridge for 5 days. Thanks Keepers, DF and Tiggy for your responses. I'll definately try your recipe Tiggy, and would love to receive yours Keepers. The weather here is just starting to warm up, so a refreshing summery drink is the perfect antidote. XXBaab

Sorry Baab, only just found my recipe book. I got these recipes from my old Cranks cookbook. When I used to go shopping in the West End - quite a few moons ago, I used to always pop in for lunch at a Cranks restaurant, above a Top Shop if I remember right, that was right by Oxford Circus. They used to have the most delicious salads, and just about everything really. Anyway, I haven't tried making this so can't verify how good it is, but the recipe is called Lemon (or orange) Brose which is based on oatmeal. It says the same recipe can be used for Lemon or Orange Barley drink - using barley flakes instead of oatmeal. I'll type it out exactly as it says:
Lemon Brose
This is a real "old fashioned" drink, based on oatmeal, that is easy to make, nutriticious and satisfying - and is especially suitable for children.
Oatmeal, medium 2 oz (50g)
Raw brown sugar 1 tbsp. (15ml)
lemon 1
Water 1/2 pt (300 ml)
Put the oatmeal in a jug with the raw brown sugar. Squeeze the juice from the lemon and add oatmeal together with the lemon halves. Pour 1/2 pt (300ml) boiling water over and stir well. Cover and leave to cool. Strain, squeezing out the juice from the lemon halves, thin to required consistency with water and serve.
For orange Brose substitue orange for lemon.
If wished this drink may be served warm. A tot of whisky gives a 'kick' (not for the kiddies presumably!). The same recipe can be used for Lemon or Orange Barley Drink - use barley flakes instead of oatmeal.
PS I always give my lemons a quick zap in the microwave before squeezing to get more juice.
