View Full Version : Winter warmer meals.

:( Its that time of year again when we need some good meals to keep us warm. We like wet meals,eg, stews, cassaroles..Anyone got any ideas?

Mums old recipe:BEEF STROGANOFF.
2oz butter
1 chopped onion
2lb stewing beef/casssarole steak, cut into strips.
8oz mushrooms, sliced or rough chopped
5fl.oz. sour cream
salt & pepper.

Melt the butter in a large frying pan. add the onions and fry until soft.
add the meat and fry for about 10minutes, until almost cooked.
add the mushrooms and fry for about 5 minutes.
stir in sour cream, season to taste and hat through gently until meat is cooked.
Goes well over mashed potatoes.

:(Martin and kayleigh don't like tomatoes crocus. ;) crocus do you have any recipeys for zebra stew, as we live besides a zoo and martin can jump the fence tonight:D:D

That stroganoff sounds nice and easy Bonnie, I am going to try it. I'm not sure about the sour cream though do you think I could use single or double cream?

The sour cream didn't seem to give the dish a sour flavour DF, i suppose you could try another cream, i'm not sure. give it a go.

Meatball Curry.
------------------

1 lb minced beef or lamb
1 onion, finely chopped
2 teaspoons curry powder
1 egg, beaten
Salt and pepper
Oil for frying.
SAUCE
1 onion chopped
1 8oz can drained, chopped tomatoes
2 tablespoons curry powder. yes tablespoons.
1 tablespoon plain flour
1/4 pint beef stock
salt and pepper.

Combine the meat, onion , curry powder, egg and salt and pepper to taste.
Divide into 16 portions and shape into balls with floured hands.
Heat enough oil in a frying pan, to cover thinly.
Add meatballs and fry on all sides.
Remove from the pan and let drain.
Pour off all but 2 tablespoons of oil from the pan.
Add the onion and fry until soft.
Stir in the tomatoes, curry powder and flour and cook for 2 minutes.
Stir in the stock add salt and pepper to taste.
Bring to the boil.
Return the meatballs to the pan and coat with sause.
Cover and simmer for 30 minutes, stirring occasionally.
Serve hot.

Serves four.

While on curry what about this:?

Chicken in Curry Mayonnaise

8 Chicken thighs
5 ml salt
2 large onion, sliced
25 ml oil
15 ml medium curry powder
15 ml vinegar
30 ml smooth apricot jam
250 ml mayonnaise.

Book chicken thighs together with salt and a little bit of water until soft and cooked through. Let it cool down completely.

Fry onions in the oil til just soft. Add curry powder and vinegar and let it fry for a bit. Add the apricot jam and allow the mixture to simmer for 5 minutes.
Put aside and allow to cool well.

Arrange thighs in your casserole. Mix mayonnaise and curry mixture, and add to the chicken thighs. This can be used hot as well as cold. Delicious!

I make lots of simple, warming dishes at this time of year from whatever I have on hand! I just chunk up vegetables, like onions, celery, peppers, sweet potatoes, swede, potatoes, carrots, and parsnips but not limited to these, fry them off to caramelise them, toss them in an oven proof dish, throw in handfuls of pulses and sometimes grains like pearl barley, quinoa, bulgar etc, pour over a can of chopped tomatoes, add some veg stock, wine or beer, and then some seasoning as to my mood (curry, tex-mex, etc). Bung it in a low oven for a couple of hours and supper is ready.

This is my no stress way of getting a hot, warming meal each evening and it goes a long way to making sure all odds and ends of veg get used up!
