:( Whenever i make dumplings for a stew they always end up doughy inside. I leave them in long enough, mabe too long? and they seem to rise lovely. So where am i going wrong.

I love my dumplings with my veggie casserole. However, I use my own recipe for dumplings. Do you use suet? I use marg and flour with strong seasoning plus a flavour like, garlic or apple or cheese. Then mix it altogether with milk and shape into six or eight pieces. Then drop on the top of the really hot casserole and put the lid on, then return to the oven for 20 minutes. I find mine are OK.....lovely actually!! I could live on veg cas and dumps!!

I often remove the lid of the casserole for half the cooking time of the dumplings, so that I end up with crusty dumplings, soft and full of the casserole juices below, crunchy top. YumYum!!
