View Full Version : Bringing up the Christmas Cake again

Well, I this week I'm going to start a list and assemble all my ingredients for my Christmas cake, but am still unsure which recipe to follow. There are a couple of Delia's online which look quite good, my Mum's Rich Fruitcake recipe which i was going to mess around with a bit and modify, but wondered if anyone had a tried and tested one they could recommend and share?

My mum made her own christmas pudding every year keepers. she gave me this recipe years ago. don't know where it originated from but it is a winner.

40z currants
8oz raisins
8oz sultanas
4oz chopped mixed peel
3fl oz ale
juice and grated rind of 1 lemon
6oz butter
8oz brown sugar
2 eggs
8oz fresh bread crumbs
2 teaspoons mixed spice
1 teaspoon grated nutmeg.

Mix the fruit, ale and lemon juice and rind together. cover and leave over night.
Cream the butter and suger together antil fluffy.
Beat in the eggs, then add all the ingredients and mix well.
Put in the centre of a floured pudding cloth and tie securely, allowing room for expansion.
put in a large saucepan, half filled with hot water and boil the pudding for 4 hours.

Serves about 6 people.

STILL in my cupboard. I keep meaning to get to it, maybe this weekend. I'll let you know :).
