2.5llbs Runner Beans
1.5lbs Onions
1.5pints vinegar
10ozs Demerara Sugar
1 level tbsp Turmeric
2 level tbsp dry Mustard powder
2 level tbsp Cornflour

String the beans and slice diagonally.
Peel and slice onions.
Pour 1pint of vinegar into a pan,add runner beans and onions. Cover and simmer for about 15mins until tender.
Blend Cornflour,Turmeric and Mustard into a paste with a little of the remaining vinegar.
Add to the pan with the Sugar and remaining vinegar.
Bring to the boil and then reduce heat and simmer gently for 10 mins,stirring occasionally.
Spoon into warmed jars,and allow to cool before covering with lids.
Makes about 4llb.

Gilly, Although it's almost exactly the same, I thought you might like this one too, as it was given to me by my 'Auntie' Kath who came from your neck of the woods. In fact the copy I have is handwritten on a piece of headed paper from her son's farm - Sportsman's Lodge, Galhampton, with a Castle Cary phone number. Is that near you?
It's very old (at least 20 years), hence the imperial measurments, The comments at the end aren't mine. I'm ashamed to say that I've never made it, but I remember that hers was delicious.

2lbs beans
1.5lbs onions
1.5 pints malt vinegar
2lbs demerara sugar
2 tblspoons cornflour
1 tsp turmeric
1 tsp dry mustard

Slice beans, cook as usual and drain
Chop onions and boil in one third of the vinegar until soft
Add sugar and beans to rest of vinegar and boil for 15 mins
Mix cornflour, turmeric and dry mustard with a little water to make paste
Put everything together and boil for 7 mins
Makes 6lb to 7lb chutney- slightly runny always so presumably add more cornflour if you prefer

Many thanks Mimi & JG - you're life-savers! I cannot for the life of me find the runner-bean chutney recipe I did last year, which was v successful (so I'm told - made the mistake of giving a lot of it away so only had one jar to myself). The bean plants are in full production right now and I've been getting enquiries as to when I'm going to be distributing pots of chutney again ... !
