Each year I make strawberry jam and only once has it ever set. I have just made some today and once agin it is not setting, I use the sugar that has the pectin in and I add lemon juice and it still looks running.
The trouble is Strawberries are not that cheap and although I have had some in the garden I did not want to make jam from them, and I really cannot afford to go and pick some more.
does anyone else have this problem? :confused:

Tricky jam, strawberry. I've had that problem in the past. Check your fruit isn't over ripe. you seem to be doing everything else. I think I used Certo with mine.

Strawberry jam really is quite difficult. Mine also never really set. So now I only cook it longer than it says in the recipe. You could test it by dripping some hot jam in some very cold water, if the jam stays together it should be allrightl.

Yep Franbee, I used slightly under ripe fruit this year and last year buecherwurm I cooked the jam longer then the recipe but it tasted burnt, but that is a good tip about the cold water. Although I am now put off making anymore strawberry jam as the strawberries are not cheap to pick. I think what I may do with this jam is use it for putting on ice cream or even making strawberry jam with it. I am going to taste a bit with my toast this morning just to see how running it is.
