This is a lovely recipe that OH and I made this afternoon. The addition of Lovage gives the soup an almost curry like taste. It can be eaten warm or chilled. The great thing about it is that the majority of the ingredients can be sourced from the garden. The only thing that we had to buy was the onion as ours aren't ready yet. It is from good old Hugh Fearnley Whittingstalls book 'The River Cottage Cookbook'.
1 medium onion, chopped
a little olive oil
500g fresh or frozen peas
1 small lettuce shredded
700ml good chicken or veggie stock
5 - 6 lovage leaves
seasoning
Sweat the onion in the oil until soft then add the lettuce and the peas. POr over the stock and bring to the boil. Simmer for 5 - 6 minutes. Remove from the heat and blend with a hand blender. Add extra stock or water if the soup is too thick.
Serve chilled or hot.
