Oxburgh Rhubarb Cake

8 oz SR flour
5 oz caster sugar
5 oz margarine
9 oz rhubard - finely diced
2 beaten eggs
3 oz sultanas
pinch salt
1 tsp brown sugar (for topping)

Grease and line 7" cake tin.
Preheat oven - 180c, 350 or gas 4

Sift flour & salt, rub in marg., stir in caster sugar, mix in eggs, rhubard and sultanas. Turn in to prepared tin and spread the sides. Sprinkle brown sugar over the top. Bake in oven for 1 hr 25 mins - 1 hr 30 mins until well risen and golden brown. Allow to cool on wire rack. Enjoy :)
