Hi can anyone give me any new appertising ways of cooking potatoes? I am trying to get my weight down and only like them fried, roasted looking brown really. I have tried a baked potato for my dinner and it made me heave.Any ideas gratefully received. X:cool:

i love roast spuds too but hate boiled spuds and new potatoes, they make me wanto heave as well, i bake a jacket potato, and when its ready i scoop out the inside and mash it up with some diced fried onions and some cheese then pop it back inside the skin and bake for a few mins more. you can also mix with mince and onion to make it taste meaty. garlic is also good with potato, make some garlic butter then mash into the spud and maybe melt some cheese on top, mmmm x

You can try making really fat potato wedges - the fatter, the better as they absorb less oil. We chop up nice floury potatoes like Romano, Desiree or Maris Pipers, par-boil them for just 5 or 10 minutes, then toss them in olive oil. cook in the oven as normal and then add vinegar and salt afterwards. They should be nice and crispy on the outside and light and fluffy on the inside, and better than chips! You can dip them in fat free tomato salsa too.

Slice and parboil potatoes of your choice, but floury ones work best. Leave skins on if you want to.

Take a good non stick pan and lightly spritz with oil (or wipe lightly with oil on a piece of kitchen paper). Saute until brown and golden on one side, flip and cook on the second side until golden brown. Transfer to serving plate and lightly sprinkle with paprika.

I picked up the habit of putting paprika on my chips when I lived in Iceland. It is a tasty and healthy alternative if you are trying to cut down on salt.

What I sometimes do is to cook the potatoes in a bit of chicken stock. Lovely. x

I just love potatos any old how! but sheddie,to answer your question,I think Oola's idea is probably the best compromise,and if you really want to use the better option get a 'light' version of a vegetable oil to drizzle them with before putting them on a baking tray in the oven,they should get lovely and crispy but be a lot less fattening.

Crocus,your idea sounds nice too,I must try that.

Sometimes we do them sliced and layered in a dish with veg stock or milk with fresh herbs and lots of black pepper then baked in the oven, sopmetimes with onions too, very tasty

We use the 'fry lite' type sprays to roast potatoes. You use very little anyway, and the potatoes come out nice and brown.

Another way to coat them lightly is to just put a drop or two of olive oil in a food bag, stick the par boiled wedges in the bag and shake it. This helps to coat the potatoes, but they don't sit in the vegetable fat and fry or roast.
