Wandered round the vege patch tonight looking for inspiration. Came back with black kale, ruby chard, red onion and a few french beans. Stir fried them in a wok with chopped ginger, some garlic and soy sauce. very good, says she modestly.

I love doing that, lily - very satisfying isn't it? My favourite at the moment is courgettes, tomatoes, and leeks, baked with dash of red wine, a bit of garlic and mixed herbs, and topped with grilled cheese.

I find that is the best way to cook; I hardly ever follow a recipe except when baking.
Tonight I cooked green prawns in a coconut sauce with pineapple served on boiled rice. All done in about 15 minutes.
Aready feeing hungry, will try variations of both the above. We eat meat as husband is a serious carnivore and I'm too lazy to make 2 meals. Usually 1 or 2 vege meals per week, so always on the ook out for new ideas.
yes lily, great way to cook. bung it in, season it and away you go! I did that with my roasted butternut squash and red pepper soup. Of course I have had disasters...but generally I find it works out ok. I made a vegetable pie the other day - literally just chucked in all the veg I had to hand - sweet potatoes, celeriac (half price, didn't know what I could do with it so just winged it), onions, garlic, red lentils (borrowed from Redstart's recipe), potatoes, carrots, peas. Added marigold bouillon, black pepper and salt, mixed dried herbs and reduced for a bit. Then knocked up a shortcrust pastry for the top, whacked it in the oven and was pleasantly surprised with the results.

I love baked veggie. In fact I love anything that can be cooked in the oven, as I keep the range on when we are in because that is our central heating! The other day I made celeric chips...in the oven with a veggie casserole, went down a treat. I also love dumplings with casseroles, herb dumplings, onion d and lately apple dumplings. Sooo many apples to get through!
