View Full Version : Chocolate Bread and Butter Pudding

3-4 slices pains au chocolat
500ml milk
500ml double cream
3 tablespoons caster sugar
1 large egg
4 large egg yolks
1/2 teaspoon vanilla extract
Ovenproof dish about 1 and 1/2 litres
Preheat oven to 160C gas mark 3
Butter your dish.
Cut up the bread roughly and arrange in dish
Put milk and cream bring to near boiling point. Whisk egg, yoks and sugar into large wide mouth measuring jug. Pour milk over whisking continuously. Add vanilla then pour over bread and leave to soak for ten minutes.
Transfer to oven and cook for about 45 minutes.
Serves 6
Once again this is from How to be a Domestic Goddess by Nigella Lawson.
I have not been able to buy Pain Chocolat here but I substitute a good fruit brioche and add cocoa to the milk in the custard.
That's just wicked....yet another recipe I am just going to have to try!!!! I've seen quite a few positive comments about Nigella Lawson's Domestic Goddess book. Do you think it's worth investing in then?

Definately. Every recipe I have tried, and there have been lots, turn out perfectly. She is brilliant.

I do think that some of Nigella Lawson's recipes are good and usually get them from the TV. However, I bought her book Feast and was really disappointed. Although the recipes were meant to be for large numbers of people I found that I always had to double the quantities to make the food stretch - unless, of course, everyone I know is just a gutsy...
The chocolate bread and butter pudding sounds like a winner, though.

Hi Jazz I don't have Feast so can't comment on the portions. Her steamed pud which I posted here made for 8 good, greedy serves.
summmerskye i have also done this recipe although from james martins sweet book just checked and there is really no difference bar a couple of more eggs it is definitely worth the effort to make only problem is it doesn't last long enough!

Oh my goodness Summerskye that sounds wonderful and certainly will have a go at making it.
Did you hear that Nigella is now on a diet and her hubby also, because of all her lovely fattening cooking, so maybe her next book will be about diets! In the mean time my daughter says that if I cook anymore from Nigella's recipe's or Jamie's I will end up looking like Nigella, although I think she very attractive even though she "was" on the plumpish side.

OH doesn't like bread and butter pudding, so I haven't tried this chocolate one. My mum always made lovely bread and butter pudding (years and years ago).

My OH is not keen. It was almost one of my wedding vows not to make it as his mother made it often and badly, but have made it on occasions.

I love b&b pudding but have not tried it with chocolate. I am going to now though.

Chocolate Bread and Butter Pudding
It's so simple but so good – and even better prepared two days in advance. Serve in small portions because it is very rich. Though I doubt if there will be any left over, it's also wonderful cold.
(Serves 6)
Ingredients
9 slices good quality white bread, one day old, taken from a large, medium sliced loaf
5 oz (150 g) dark chocolate (70-75% cocoa solids), broken into small pieces
3 oz (75 g) butter
15 fl oz (425 ml) whipping cream
4 tablespoons dark rum
4 oz (110 g) caster sugar
good pinch cinnamon
3 large eggs
To serve:
well chilled pouring cream
Equipment
You will also need a shallow ovenproof dish 7 x 9 inches (18 x 23 cm) base x 2 inches (5 cm) deep, lightly buttered.
Method
Begin by removing the crusts from the slices of bread, which should leave you with 9 pieces about 4 inches (10 cm) square. So now cut each slice into 4 triangles. Next, place the chocolate, whipping cream, rum, sugar, butter and cinnamon in a bowl set over a saucepan of barely simmering water, being careful not to let the bowl touch the water, then wait until the butter and chocolate have melted and the sugar has completely dissolved. Next, remove the bowl from the heat and give it a really good stir to amalgamate all the ingredients.
Now in a separate bowl, whisk the eggs and then pour the chocolate mixture over them and whisk again very thoroughly to blend them together.
Then spoon about a ½ inch (1 cm) layer of the chocolate mixture into the base of the dish and arrange half the bread triangles over the chocolate in overlapping rows. Now, pour half the remaining chocolate mixture all over the bread as evenly as possible, then arrange the rest of the triangles over that, finishing off with a layer of chocolate. Use a fork to press the bread gently down so that it gets covered very evenly with the liquid as it cools.
Cover the dish with clingfilm and allow to stand at room temperature for 2 hours before transferring it to the fridge for a minimum of 24 (but preferably 48) hours before cooking. When you're ready to cook the pudding, pre-heat the oven to gas mark 4, 350°F (180°C). Remove the clingfilm and bake in the oven on a high shelf for 30-35 minutes, by which time the top will be crunchy and the inside soft and squidgy. Leave it to stand for 10 minutes before serving with well-chilled pouring cream poured over.

How on earth did this thread come up again? it seems to be the one "visitors" are always looking at. I made a huge Choc B&B pudding for Boxing Day (15 of us) and there was very little left over!
