Has anybody got a good recipe for Pumkin soup please. I have never made it before but I have had it and throughly enjoyed it. I have this pumkin and thought I would make some soup.

750 gm pumpkin
2 leeks or 2 large onions
250g potatoes
1 litre of chicken stock (chicken stock cubes are fine)
1 cup cream
salt & pepper
Peel pumpkin, cut in small cubes put in large saucepan. Add sliced leeks or onions and peeled and cubed potatoes plus stock. Bring to boil then reduce heat and simmer uncovered for about 25 minutes or until vegetables are very soft and tender. Push through sieve, mouli or puree in blender; alternatively I often just use a potato masher in the pot. Return to saucepan, bring back to boil and add cream. Add salt and pepper. Simmer 5 minutes.

I make pumpkin soup just like that SS and sometimes add a tin of tomatoes for an extra rich flavour - yum!
I make a roasted butternut squash and red pepper soup and it's so good. Rich made it last night and just added some leftover tomato puree concentrate, which was a nice touch.
Has anyone ever tried the blueish pumpkins, rather than the traditional large orange ones?

In Australia we also tended to use Queensland Blue pumpkin. It is blueish grey and very hard skinned. It is a beautiful pumpkin, dry and sweet. It is now being replaced by Kent pumpkin which is similar but the skin is not so hard. The harder skin allows the pumpkin to keep better however. We also use the Butternut but rarely see the large orange ones.

Thanks Summerskye, I will try and make it tomorrow, in between dashing around getting my daughter's blessing organised. I am looking forward to it but also will be glad when I can get back to normal again.
does it freeze well?

Have never tried freezing it, leftovers keep in the fridge though. It is so good it tends to get eaten quickly.

The pumkin soup I've tasted, had a sweet taste which I'm not very fond of. Is it the pumpkin's natural sugars or does suger get added in some recipes.

Crocus, pumpkin is naturally sweet, try this recipe with the potato added and see what you think.

Summerskye, I made your pumpkin soup this lunch time and you are right with the potatoe it takes away the sweetness. It is really lovely I cannot wait to make more.......yummy

I find that roasting the pumpkin first adds extra depth to the flavour of soup. Just roast slices or chunks of pumpkin in the oven until it is soft and then make the soup.

Okay, I'll try this pumpkin soup - hubby will be elated, because he loves pumpkin soup. Didn't realise that potatoes takes away the sweetness - thanks!
