I've not yet made good use of my baking trays that I was given for my birthday.

When I have a 'snack attack' (e.g. when I REALLY want to have a nibble of something a bit naughty and nice), there's nothing better than reaching for a home-baked goodie. I love baking quick, easy but tasty cakes and bakes, so if you have any ideas of recipes for cookies, cakes etc. for me to try, I'd be really interested to hear. Even better if you have some unusual recipes for me to try (bearing in mind I'm vegetarian!). I might even photograph the resulting specimens!

Themed easter baked goodies are also welcome!

I love flapjacks but mine always go hard so grateful to anyone who has a recipe or method whereby they stay soft.

These flapjacks are moist and delicious.

2 Bramley apples peeled, cored and sliced
The juice of half a lemon
150g butter
75g brown sugar
75g golden syrup
225g porridge

Pre-heat oven to 190C (375F or gas 5). Place the apples an a small saucepan together with the lemon jucie and a little water. Bring to the boil, cover and simmer for 10 mins or until the apple is soft then mash the apple to a soft puree

Melt the butter, sugar and syrup in another pan, but do not let the mixture boil. Stir in the oats and mix well.

Press half the mixture into a 20cm sandwich tin. Spread the apple puree on top, then cover with the remaining flapjack mixture. bake for 25 mins, or until golden brown.

Rwmove from the oven and mark into slices, but leave to cool before attempting to remove from the tin.

They are rather yummy and I find it hard not to eat more then one! You could also give these a try Oola, but I will have a think of something else for you as well.

Oola this is from Nigella Lawson Express book, very quick to make and very, very tasty.

Chocolate Pistachio Fudge

350g dark chocolate (70% cocoa solids), chopped
1 x 397g condensed milk
30g butter
pinch of salt
150g pistachios

Put the chopped chocolate, condensed milk, butter and salt in a heavy based pan on a low heat, stir to melt.

Put the nut into a freezer bag and bash them with a rolling pin, until broken up into both big and little bits.

Add the nuts to the melted chocolate and condensed millk and stir well to mix.

Pour and spatch this mixture into a foil tray 23cm square, smoothing the top.

Let the fudge cool, and refridgerate until set. you can then cut it into small pieces.

Once cut, it can be kept in the freezer - no need to thaw just eat straight away.

Makes approx 60 pieces of fudge.

Mmm Yummy! I made these for Christmas and they went down a treat., I shall be making them again for Easter. Hope you enjoy :D

Oooo condensed milk. Sounds brill, I think I shall go on a shopping trip and bake some fudge up for Easter, then wrap it in some cellophane to try and make it look presentable!
